Ideal Protein Cauliflower Mashed Potatoes

I am definitely posting this recipe because it is soooo delicious and so wonderful to have an alternative to regular mashed potatoes.

Ingredients:
  • 1 head of fresh cauliflower
  • Onion Powder
  • Garlic Powder
  • Sea salt or salt to taste
  • Pepper to taste
  • 1 packet of Ideal Protein Chicken Soup
  • 8oz of Swanson Fat Free Chicken Broth Unsalted
Equipment:
If you have a Ninja, Bullet, or Vitamix, that will be helpful to mash everything together.
  1. Preheat oven to 400 degrees.
  2. Clean the cauliflower and chop it up into small pieces. 
  3. Spray a cookie sheet with Olive Oil Pam. 
  4. Place the chopped up cauliflower on the cookie sheet.
  5. Season the chopped up cauliflower with a little onion powder, garlic powder, salt, and pepper.
  6. Roast in the oven at 400 degrees for approximately 20 minutes or until soft.
  7. After you take the cookie sheet out, put the roasted cauliflower pieces into the ninja cup.
  8. Add1packet of the Ideal Protein Chicken Soup to flavor and blend with the Fat Free Chicken Broth. 
NOTE:  If you have a lot of cauliflower, and it all won't fit into the blending cup, then divide the blending up into 2 rounds.  You can put half the cauliflower in the cup for the first round and use half the packet of the Ideal Protein Chicken Soup along with 4oz of the Chicken Broth.  Then do the second round.  Blend until the consistency of mashed potatoes.

Serve with your favorite protein whether it be a steak, baked chicken, salmon, or whatever you like.  Enjoy!!!
