Spaghetti Zoodles or Stir Fry Zoodles

I recently was given a cool pearl about zucchini.  You can make zoodles out of zucchini.  How cool is that!!!  So my understanding is that places like Trader Joes will sell frozen zoodles, but I decided to just buy the zucchini fresh and spiralize them.  My younger daughter loves to spiralize the zucchini.  This is the spiralizer I purchased, and I love it. Things to Note:  After the zucchini are spiralized, put then between 2 paper towels...arranging them across the paper towel.  Leave them for at least 30 minutes to dry out so the water gets absorbed as much as possible.  Then you can just stir fry them up on a pan.  Sometimes I spray the pan with olive oil Pam spray..sometimes not.  It doesn't really matter. This is great for making stir fry's or just use the zoodles as the noodle base for your favorite spaghetti sauce. Another awesome option!!! Before After

Keto Friendly Fried Chicken...Yesssssssss

Ingredients Package of 5 drumsticks (Other options would be chicken breasts if you want to do chicken strips or a package of chicken wings) Ideal Protein Fine Herbs and Garlic Crisp snack bag, CRUMPLED into bits and pieces Egg White or 1 Egg beaten Olive Oil Pam Spray Preheat oven to 400 degrees. Wash drumsticks and cut off the skin.  Let it dry with paper towels. Dip each drumpstick into the egg mixture. Coat with the crumpled Ideal Protein Fine Herbs and Garlic Crips. Lightly spray a cookie sheet or glass baking dish with the Pam Olive Oil spray. Put each coated drumstick on the cookie sheet/glass baking dish. Bake on 400 for 45 minutes. Enjoy!!  This tastes great with the cauliflower mashed potatoes or even a side of a steamed veggie.

Keto Friendly Korean Short Beef Ribs

Ingredients 1.5 pounds of beef short ribs 3 packets of Stevia fresh lemon juice for tenderizing.  Use juice from 2 or 3 lemons. 1 tsp Grapeseed oil Seasoning Sauce 4 Tbsp of Low Sodium Soy Sauce 3 Packets of Stevia 1/4 tsp sesame oil 1 clove garlic, sliced 1 slice ginger root 1/8 tsp pepper 5 Tbsp water Open the package of short ribs, rinse, and dry the meat. Remove the visible fat. Make diagonal slashes halfway through the meat about 1 inch apart. Place the meat in a bowl, add 3 packets of Stevia and lemon juice.  Let it stand for about 20-30 minutes. Heat the grapeseed oil in a large frying pan, and then brown the meat on both sides.  Once the meat is browned on both sides, set it aside. Combine the seasoning ingredients and mix well. Place the ribs in a heavy cooking pot or casserole dish, pour the seasoning sauce over the meat. Cook over a high heat until the sauce comes to a boil, then turn the heat down to very low and cover.  You...

Keto Neck Bone Soup with Shirataki Noodles

Ingredients 3 to 4 pound package of neck bones (typically found in international grocery stores) 2 tsp salt 1 medium sliced onion 6 cloves of garlic, minced Ground Black Pepper 2 packages of Shirataki Angel Hair Pasta Noodles Optional:  Chili Garlic Sauce for extra spice Open package of neck bones, and wash the neck bones thoroughly.  Put the neck bones in a large stock pot filled with water. Lightly boil the pot to further rinse out the neck bones.  You may need to do this once or twice. Once the neckbones are clean, fill the pot with water about an inch above the neckbones so that the neckbones are covered. Add the salt, sliced onions, minced garlic, and black pepper. Bring the pot to a boil and then turn the temperature to low. Let the pot simmer for a three hours. Ideal Protein Cauliflower Mashed Potatoes I am definitely posting this recipe because it is soooo delicious and so wonderful to have an alternative to regular mashed potatoes. Ingredients: 1 head of fresh cauliflower Onion Powder Garlic Powder Sea salt or salt to taste Pepper to taste 1 packet of Ideal Protein Chicken Soup 8oz of Swanson Fat Free Chicken Broth Unsalted Equipment: If you have a Ninja, Bullet, or Vitamix, that will be helpful to mash everything together. Preheat oven to 400 degrees. Clean the cauliflower and chop it up into small pieces.  Spray a cookie sheet with Olive Oil Pam.  Place the chopped up cauliflower on the cookie sheet. Season the chopped up cauliflower with a little onion powder, garlic powder, salt, and pepper. Roast in the oven at 400 degrees for approximately 20 minutes or until soft.
