Keto Friendly Korean Short Beef Ribs

Ingredients

1.5 pounds of beef short ribs
3 packets of Stevia
fresh lemon juice for tenderizing.  Use juice from 2 or 3 lemons.
1 tsp Grapeseed oil

Seasoning Sauce

4 Tbsp of Low Sodium Soy Sauce
3 Packets of Stevia
1/4 tsp sesame oil
1 clove garlic, sliced
1 slice ginger root
1/8 tsp pepper
5 Tbsp water

  1. Open the package of short ribs, rinse, and dry the meat.
  2. Remove the visible fat.
  3. Make diagonal slashes halfway through the meat about 1 inch apart.
  4. Place the meat in a bowl, add 3 packets of Stevia and lemon juice.  Let it stand for about 20-30 minutes.
  5. Heat the grapeseed oil in a large frying pan, and then brown the meat on both sides.  Once the meat is browned on both sides, set it aside.
  6. Combine the seasoning ingredients and mix well.
  7. Place the ribs in a heavy cooking pot or casserole dish, pour the seasoning sauce over the meat.
  8. Cook over a high heat until the sauce comes to a boil, then turn the heat down to very low and cover. 
  9. You will want to let it sit on low for about 2 hours.  From time to time, collect the sauce in a ladle, and moisten the top of the meat. 
  10. After a couple hours, turn the stove off and let the pot cool down.  Put the pot in the fridge overnight.
  11. In the morning, skim the fat off the top.
  12. A few hours before serving time, put the pot back on the stove top with the lid on.
  13. Set the temperature to low and let the pot sit on low for a few more hours.
Enjoy with cauliflower mashed potatoes or maybe a side of asparagus.
