Keto Friendly Korean Short Beef Ribs
Ingredients
1.5 pounds of beef short ribs3 packets of Stevia
fresh lemon juice for tenderizing. Use juice from 2 or 3 lemons.
1 tsp Grapeseed oil
Seasoning Sauce
4 Tbsp of Low Sodium Soy Sauce3 Packets of Stevia
1/4 tsp sesame oil
1 clove garlic, sliced
1 slice ginger root
1/8 tsp pepper
5 Tbsp water
- Open the package of short ribs, rinse, and dry the meat.
- Remove the visible fat.
- Make diagonal slashes halfway through the meat about 1 inch apart.
- Place the meat in a bowl, add 3 packets of Stevia and lemon juice. Let it stand for about 20-30 minutes.
- Heat the grapeseed oil in a large frying pan, and then brown the meat on both sides. Once the meat is browned on both sides, set it aside.
- Combine the seasoning ingredients and mix well.
- Place the ribs in a heavy cooking pot or casserole dish, pour the seasoning sauce over the meat.
- Cook over a high heat until the sauce comes to a boil, then turn the heat down to very low and cover.
- You will want to let it sit on low for about 2 hours. From time to time, collect the sauce in a ladle, and moisten the top of the meat.
- After a couple hours, turn the stove off and let the pot cool down. Put the pot in the fridge overnight.
- In the morning, skim the fat off the top.
- A few hours before serving time, put the pot back on the stove top with the lid on.
- Set the temperature to low and let the pot sit on low for a few more hours.
